These biscuits are divinely good to nibble with a glass of red wine and they are incredibly easy to make. One tip to remember is to ensure that the cayenne pepper is freshly opened. I remember being advised, many years ago, that ground spices or dried herbs should be used within 3 weeks of opening as they lose their strength. How many of us have jars sitting in the cupboard for many years that we happily continue to use! The first time I made these my jar of cayenne pepper was about 6 months old. It had completely lost its kick.
Also remember, don’t overwork the mixture when bringing it together as a ball. The more you work the flour, the tougher your results, as with cake, scones, shortbread, etc …….
