A few years ago I was provided with some recipes for guests to make with me when coming to England on a Beatrix Potter tour. The recipes came from Peter Rabbit’s Cookery Book by Sakuko Kitano. We made Ginger and Pickles’ Oat Biscuits, Jeremy Fisher’s butterfly sandwiches and Appley dappley’s jam tarts.
The biscuits proved very popular and are incredibly easy to make. I have adapted the recipe using wholemeal flour rather than plain and adding the ginger. I now call them my hiking biscuits as they are great to eat when struggling up a steep hill and you want an extra boost of energy. Enjoy!
